The last few weeks have been hectic, because there is a lot I need to do before my vacation in Zimbabwe. I do not want to have to think of things that I must do instead of having fun. After a long day I am always looking for fast and easy dishes with minimal cleanup. My favourite are one pot meals. They are easy and you only have one pot to clean.
I love paella but had never thought of making it with ground beef. I always buy ground beef because of the price and its versatility. It is good in an appetizer or a main dish and is easy to bulk up with vegetables.
You do not need any special skills to make this dish and takes about as long as it would take to boil some rice. When you cook rice in a liquid other than water, it soaks up all the moisture and it bulks up that it will go even further. This makes feeding your family easy on your pocket.
Instead of cooking the vegetables separately you can add them in the last few minutes before your rice is done so that they are still crunchy when you eat them
Rice and Ground Beef
Ingredients
- 1 tablespoon olive oil
- 1 chopped onion
- 1 crushed garlic clove
- 1 cup crushed tomatoes
- 1 teaspoon curry powder
- 1 lb ground beef
- 2 cups beef stock
- 1 cup rice
- salt and pepper to taste
Instructions

In large skillet, fry onion and garlic for about two minutes

Add ground beef and cook until browned

Add tomatoes, curry powder and salt and pepper to taste.

Add the stock, followed by the rice and stir together. Bring to a boil and reduce heat. Cook until the rice is cooked.

Serve immediately.

I serve it as it is with some vegetables or a salad.
