When I was in high school we did a class on leftovers. It was all about how to reuse them and how to make it taste fresh. We made fried rice that week and I fell in love with it.
Fried rice is one of the few things that when I cook it, I enjoy it right away. I cook everyday at least twice a day and I usually do not enjoy what I cook. By the time we get to eat, I would have lost my appetite. It is usually better the next day or if someone else cooks for me. With fried rice, I usually enjoy it right away.
When making fried rice, it is better to use rice that has been cooked the previous day or a couple of hours before. It tastes so much better. For me the more onions, scallions and spices I use the better it tastes. Just my personal preference. You can use any kind of meat you want like chicken, ground meat(beef, chicken,turkey) or bacon. Some people like a lot of vegetables in their rice, I usually go with my mood and what I have available. It is the kind of dish that you can make your own.
Fried rice
Ingredients
- 2 tablespoons canola oil
- 1 onion chopped
- 1 carrot chopped
- 1 bell pepper chopped
- 1 cup frozen peas
- 2 cloves crushed garlic
- 2 tablespoons Thai yellow curry paste
- 1 cup cooked chicken
- 2 eggs
- 2 cups cooked rice
- 2 chopped scallions
Instructions

<span></span>Toss in the chicken and make a well in the centre of the mixture. Add the eggs and stir well. Add the rice and stir-fry together until heated through and has absorbed all the flavours.
