These days my time just seems to vanish and before I know it is bedtime. While I miss writing and creating like I used to, I am happy to be in this stage where Leo is learning to read and write. Sometimes frustrating but its amazing to see how much he has grown. I have one child and sometimes it seems I have more, or I just feel like that.
On to today’s recipe, I made sadza pizza which really is just goko (sadza crust) with cheese. If you were in a mission boarding school I am sure you can relate. What was your favourite by the way porridge or sadza goko. Either way I think both are delicious especially when you do not have to eat them but just like it.
If you know how to make sadza you don’t really need a recipe, just remember to make the sadza thin enough to be spreadable. Let it cool and use your favourite pizza toppings. Bake it and enjoy. The hotter the oven makes it even better for a crustier sadza.
Sadza Pizza
Ingredients
- 1 3/4 cups water
- ½ cup maizemeal
- 1/3 cup Ready made pizza sauce
- 1½ cups Mix of mozarella and cheddar cheese grated
- 1 Tomato sliced
- Spinach leaves

For sadza crust

To make the sadza crust: In a medium saucepan, bring the water to a boil. Add the maize meal in a gradual stream, whisking constantly to prevent lumps. Reduce the heat to low and continue to cook, whisking frequently, for about 15-20 minutes until the mixture pulls away from the sides of the pan into a firm, sticky mass.

Put some mealie meal on a baking sheet/ pizza stone. Spread the hot sadza into a preferred shape. Leave to cool down completely.
For pizza

Preheat the oven to 450 F.

Spread pizza sauce. Add cheese and tomato slices and spinach on top. Feel free to use your favourite pizza toppings.

Bake for 15-20 minutes or until golden brown on top.
