Last year I shared a recipe of my mom’s cucumber, tomato and onion salad. Adding an avocado makes this salad even more delicious.
I added red pepper flakes that gives it a kick. If you do not like spicy food you can skip the pepper flakes or cut the amount. The recipe makes enough for four, I like to eat it as is or as side dish to grilled meat.
Avocado, cucumber and onion salad

grape tomatoes
sliced in half

medium red onion
sliced

extra virgin olive oil

Juice of 1 lime or lemon

1/2 bunch parsley, chopped

kosher salt

black pepper

red pepper flakes

Place tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped parsley into a large salad bowl.

Drizzle with olive oil and lime juice. Toss gently to combine. Just before serving, toss with sea salt , black pepper and red pepper flakes.
