Breakfast Rice Bowl with Chai Spiced Milk

Delicious breakfast rice bowl with chai spiced milk.

One of my favourite things is leftover plain rice with milk. Fresh milk or curdled milk doesn’t matter either is delicious.

Last week I decided to change it up and used chai spiced milk and topped it off with fruits and nuts. It is probably one of the most fulfilling breakfasts I have ever had. It actually fueled me until lunch time. I got a lot done.

I just combined many favourite things of mine. You can use whatever you like. Plain milk without fruit is actually great. If you would like to make it vegan, try using coconut milk or one of the nut milks instead.

Breakfast Rice Bowl with Chai Spiced Milk

Ingredients

Chai Spice Mix

  • 1 tablespoon ground cinnamon
  • teaspoons ground cardamom
  • teaspoon ground ginger
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • ½ teaspoon nutmeg
  • 1 cup jasmine rice
  • 1 cup milk
  • 1 teaspoon Chai spice mix
  • ½ tablespoon sugar optional

Toppings

  • Pecans
  • Coconut
  • Strawberries
  • Peaches

Instructions

  1. Rinse rice and soak 10 minutes. Prepare rice according to instructions. Adding a dash of salt while it cooks.
  2. Once the rice is cooked, transfer to a bowl.
  3. Scald milk and add chai spice.
  4. Top with nuts, fruit and coconut. Pour milk and enjoy. You can either eat right away or let it cool in fridge.
