Bruschetta with Goat Cheese

I like trying new food but sometimes I am hesitant about buying things I have never not had before. There is a chance that I may not like it and will be stuck with it. That would be such a waste!

Late last year, I had the chance to try bruschetta and I loved it! So I decided to recreate the recipe and now I live it some more.

Bruschetta sounds so fancy, which sometimes means difficult but this is just the opposite. If you can slice bread then you will be able to make this recipe. The key is to use fresh and quality ingredients. This was my first time buying goat cheese. Even though people rear goats, most people in Zimbabwe do not drink goat’s milk. I guess people are turned off by the smell of the goats, I know many people who do not eat goat meat just because of the smell.

It will make a great appetiser or snack.

Bruschetta with Goat Cheese

Ingredients

  • 4 slices of baguette
  • 1 chopped tomato
  • bunch of basil chopped
  • salt
  • 1 clove garlic halved
  • extra virgin olive oil
  • 1/4 cup goat cheese

Instructions

  1. In a bowl, mix the tomatoes, basil, salt, and olive oil.
  2. Grill both sides of the bread using a barbecue grill, oven, or a bread toaster.
  3. Rub one side of the bread with the halved garlic, drizzle with extra virgin olive oil. Spread the goat cheese on the bread and then spoon the tomato mixture on it.
  4. Serve while hot.
