Yesterday after lunch it started to rain and I wished it was winter already and I could make a quick bread and have some tea. My wish did not come true, it actually just became more humid! Like I needed that.
I went ahead and made the bread- Carrot Coconut Bread. Making the bread was an impulse decision so I went with the ingredients I had in the house. I love making quick breads, they are fast and easy.Most contain vegetables and or fruits so you feel good about eating them as well.
This bread is super moist and delicious.

Carrot Coconut Bread
Ingredients
- 1¼ cup flour
- ¾ cup sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup sweetened coconut flakes
- ½ cup canola oil
- ½ cup buttermilk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup shredded carrots
Instructions

Preheat oven to 350F.

Mix all the dry ingredients in a bowl. and set aside.

Whisk all the wet ingredients in a separate bowl and stir in the carrots.

Pour the wet ingredients into the dry and fold in until the mixture is just about mixed. Pour in a prepared bread pan.

Bake for about 50 -60 mins or until a tooth pick inserted comes out dry. Leave to cool before serving.
