Remember how I was complaining that winter kept dragging on and we kept getting a lot of rain. Well! We just went from like a 0 to 100! It’s now hot, not yet unbearable but hot anyway. I am sure August will be . One good thing to come with this heat is that we wear less clothes,which means laundry just got easier! Laundry is one of my least favourite chores, in case you did not get that.
When you travel around Bermuda in summer, you are likely to come across snow cone carts all over the island. Snow cones are made with shaved ice and drizzled with a syrup. I only got to taste one last week. In all my time here it is one of the things that even though is quintessentially Bermudian, I was never interested in trying. There are actually a number of things that I have not tried on the island. Say for example I have not had a Bermudian fish sandwich, I will though, soon. I ramble, but yes I tried a snow cone, I had actually bought one for Leo. It was as I suspected ice with some syrup but reaally cools you down.
I wanted to make some for Leo at home. There are many ways to make the syrup, most people use Koolaid. You buy Koolaid in powder form and and then mix it in water, kinda like Jolly Juice in Zimbabwe. After taste and all that, so I do not buy it. I used fresh fruit, actually fresh fruit simple syrup.
I simmered mixed frozen berries with water and sugar. I strained it and let it cool completely in the fridge.
I put the ice in these beautiful ice cream cups I got at the dollar store( which is actually $2,50). I used a blender to make my ice, you could buy a shaved ice machine if you made a lot of snow cones regularly. I don’t need to.
I poured the syrup on top of the snow cones and had fun eating these with Leo. Which really was just making a mess.
Here is the recipe for the simple syrup.
Fruit Simple Syrup
Ingredients
- 1 cup water
- 1 cup sugar
- 1 1/2 cups mixed berrys fresh/frozen
Instructions

Bring all the ingredients to a boil, reduce heat and simmer for about 20 minutes.

Strain through a mesh sieve abd cool completely before using.
