In primary school, I was in Brownies and Girl Guides. I can’t say I loved it but it did introduce me to many new things. I think it was in grade 3 or 4 that we were taught how to make pancakes. Pancakes were one of those things that were not part of our diet in our home or for many Zimbabweans either. So it was exciting to have something to show my mom something new.
It’s different for Leo, he is growing up in a different culture than I did. Pancakes and waffles are part of that. I have made more pancakes in the past three years than I have my entire life. I now get a chance to put my own spin on it.
This is the first recipe using madhumbe flour. This one uses no other flour except madhumbe flour making it a great replacement for wheat flour. You do get a distinct flavour of madhumbe.
Madhumbe Pancakes
Ingredients
- 1 1/2 cups madhumbe flour taro root
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 3/4 cups milk
- 2 eggs
- 2 tablespoons butter
Instructions

In a large bowl, sift madhumbe flour, baking powder, and salt.

Add milk, eggs, and melted butter and mix until there are no visible lumps. Let the mixture sit for 5 minutes.

In a large griddle over medium heat, melt some butter or oil. Pour 1/4 cup of batter and once it starts to bubble, flip and cook an additional minute on the other side. Repeat the process with remaining batter and serve.
