Everyone I know loves fried chicken except for those who are vegetarian or vegan. I think it is one of those things that you will find any country you go to, especially with fast food chains like McDonalds that can be found on every continent. Fried chicken not done well will have lots of oil and hence calories.
Baking chicken allows you to have moist chicken without all the calories and all the labour of frying a chicken on the stove top. In Zimbabwe me and my sister used to make fried chicken and believe it was a labour of love. Making oven fried chicken would have saved us a lot time. The only work you do is coating the chicken and sticking it into the oven. If you are entertaining it will be a sure way to impress your guests.
The chicken is coated in a breadcrumb and oil mixture that makes the chicken crispy and gives the appearance of fried chicken while keep the meat moist.
Oven Fried Chicken
Ingredients
- 8 chicken thighs
- salt and black pepper to taste
- 2 large eggs
- 1/4 cup milk
- 1 1/2 cups breadcrumbs
- 1 teaspoon paprika
- 1/4 cup vegetable oil
- 1 cup all-purpose flour
Instructions

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper, set aside;

Remove skin from chicken thighs and season with salt and pepper, to taste.

In a large bowl, whisk together eggs and milk. In another large bowl, combine breadcrumbs, paprika and vegetable oil; season with salt and pepper, to taste.

Working one at a time, dredge chicken in the flour, dip into the egg mixture, then dredge in the breadcrumbs mixture, pressing to coat.

Place chicken onto the prepared baking sheet and bake for 35-40 minutes, or until the crust is golden brown and the chicken is completely cooked through.

Serve immediately.
