Life in Bermuda is getting back to normal after the storm. Thankfully the hurricane was downgraded by the time it got to us. The island did nit receive a lot of structural damage. By mid day Monday, a lot of people had gone to work and schools open Tuesday.
Talking about schools, I know a lot of moms with older children who are always on the lookout for easy school night dinners. Leo does not go to school yet but I try to get him to do at least one activity outside our home. By the end of the day I am tired and want a meal that is easy to prepare. One of the things that I do is pre-cut vegetables I use regularly like onions. It makes my life easy. I usually gravitate towards one pot meals and meals I can throw in the oven. My go to when I do not have time is sadza with sautéed ground beef and kale. It takes me all of 15 minutes including prep.
Last week when I went to the shops I found these beef short ribs, they looked so good so I bought them. Sometimes I plan my meals but I usually go with the flow. Usually when I buy short ribs I slow cook them in some kind of stew. Always.
