During the summer, al my other plants could not survive the heat except for basil. It is one of the easiest plants to grow. I usually have so much of it than I can use. I have tried drying it but Bermuda is too humid for drying, it just gets mouldy. I will probably try to oven dry it.
The other option would be to make pesto, but I usually do not have all the ingredients. I love pesto with garlic bread and each time we eat out I have it if it is available. It is so easy to make that I should have some more often but I get caught up doing other things
I harvested some leaves and had enough to fill 3 cups. There is nothing that makes me as happy as growing my own food. It saves me money and I can eat what I want.
To make pesto, you just dump all the ingredients in the food processor and that is all you have to do really. How easy is that.
I love pesto on bread but you can also use it in pasta recipes and as a marinate. If you make more than enough to eat you can freeze it as well.

How to make pesto
Ingredients
- 3 cups basil packed
- 1/2 cup pine nuts
- 1/2 cup grated parmesan cheese
- 1/2 cup olive oil
- 2 cloves garlic
- salt and pepper to taste
Instructions

Dump all the ingredients in a food processor and process until smooth.
