I have not blogged in a while. I have kept myself busy gardening. There is still so much to do around here and I love it. Maybe I will show you some of the spaces I have created. I share more of the garden on Instagram.
Our soils are sandy and still need a lot of amending to produce any amount of food and flowers. We do not have access to affordable compost, and we rely on friends and family for cow manure, and it has helped us heaps. Our winter crops did ok; we had onions, garlic, cauliflower, broccoli, and herbs. Fortunately for us, we did not experience any frost, even though it was a cold winter. We do not have a lot of excesses but enough to feed us here.
We grew some cauliflower which we enjoyed in several dishes. I even enjoyed it raw because it was so tender and tasty. One of which was these cauliflower bites.
Cauliflower bites have considerably fewer calories compared to when you use potatoes in the same recipe. They taste just as good as well.
Cauliflower Bites
How to make cauliflower bites
Ingredients
- 12 oz cauliflower cut into bite sized pieces (about 1/2 a large head of cauliflower)
- cooking oil for frying
- 2 large eggs whisked
- 2 tablespoon heavy cream
- 1 cup flour
- 1 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
Instructions

Bring 1 cup of water to boil and add cauliflower. Cook for five minutes or until the cauliflower is tender. Drain and mash the cauliflower.

In a small bowl, whisk eggs with heavy cream. Set aside.

In a medium bowl, whisk together flour, garlic powder, smoked paprika and cayenne pepper. Set aside.

Mix the cauliflower, eggs and flour micture into a wet dough.

Pour 1 1/2 inches of cooking oil into a pot. When the oil reaches 350F, spoon the cauliflower dough into the oil. Make sure not to crowd the pot. Cook a few minutes until a deep golden brown. Remove cauliflower bites with a slotted spoon and place onto a paper towel lined plate. Repeat with remaining cauliflower bites dough.

Serve warm with your favourite dip.
