Easter is over at least for use here, Easter Monday is not a holiday. Good Friday is the day that people in Bermuda enjoy the most. People fly their kites, bake hot cross buns and eat fish cakes. We went to St David’s Cricket Club. Leo really enjoyed it. He was running after all the dogs we saw. It was a beautiful spring day. I am praying for more days like Friday.
If you have been reading this blog for a while then you know I love any kind of salad. A salad is the easiest thing to make and I think it makes for a good starting point for someone learning to cook. There is little to no cooking involved and usually takes a few minutes to finish.
I like to use up all the food that I have left over and this Chicken, pasta and grape salad does just that. I had some left over chicken and pasta. I added some grapes scallions and herbs to add some freshness to the dish.
Chicken, Pasta and Grape Salad
Ingredients
- 1 cup cooked chopped chicken
- 1 cup cooked pasta
- 1/4 cup halved grapes
- 1 table spoon chopped parsley
- 2 table spoon chopped scallions/ spring onions
- 1/4 cup mayonnaise
- 1 tea spoon lemon juice
- 1 tea spoon English mustard
- 1 tea spoon curry powder
- salt and pepper to taste
Instructions

Mix the chicken, grapes, and pasta in a bowl.

In a separate bowl whisk mayonnaise, lemon juice, mustard and curry powder. Add to the chicken mixture add salt and pepper to taste.

Sprinkle the scallions and parsley

Chill in the fridge, serve on a sandwich or a bed of lettuce.
