The past week has been nothing but easy. My son is teething and he is just all round fussy and has a runny nose to go with it. For two nights he would wake up at three in the morning and would not go back to sleep for at least another two hours. Being a mother is not easy but you quickly forget the pain. When I am tired I remind myself that “simba mukaka rinosinira”; it’s a Shona proverb that translates to, energy is like milk on a nursing mother(human or not) it replenishes itself.
To cheer myself up I decided to make chocolate chip cookies. Baking always cheers me up, especially if its making bread.
Here is the recipe I used:
Chocolate Chip Cookies
Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup softened butter
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups semisweet chocolate chips
Instructions

Preheat oven to 375F.

Sift together flour, baking soda and salt.

Cream together butter and sugar until creamy.

Beat in vanilla extract and the eggs until well blended.

Gradually add the mixed dry ingredients. Stir in the chocolate chips.

Roll dough into balls by hand and place on an un-greased pan. Bake for 8 -10 minutes. Cool completely on a wire rack.
