This August has not disappointed in terms of the weather. It is hot and humid as expected and I don’t like it! It basically takes away the will to do anything and makes everything uncomfortable. Clothes, cooking, working or taking a walk outside.
For breakfast, I prefer something cold. Since you can eat porridge hot or cold, this chocolate porridge is perfect.
To make chocolate porridge I add cocoa powder. But the best part of this dish is the caramelised bananas. I sprinkled them with some sugar broiled them until they are browned. If you have a blow torch that would too.
Chocolate Porridge with Caramelised banana
Ingredients
- 1/2 cup maize meal
- 2 tablespoons cocoa powder
- 1/ teaspoon kosher salt
Topping
- 2 Bananas
- 1 teaspoon sugar
- 1/2 cup cranberries
Instructions

Boil 2 cups water in a saucepan. Blend cornmeal, cocoa powder and 1/2 cup of water in a small bowl. Whisk into the boiling water.

Reduce heat and leave to simmer for about 15 minutes.

Slice bananas lengthwise and sprinkle with sugar, broil on high until browned or use a blow torch.

Serve hot or cold topped with bananas, cranberries and the seeds.
