My favourite meal is breakfast and my favourite thing to eat for breakfast is porridge. If you have been here long enough, you will know I love porridge in so many different ways. It’s my comfort food. It is annoying that my son is not a morning person and he really does not like porridge as I do. The only porridge he will eat is Cerevita.
A few years ago I made sadza with coconut milk and it never occurred to me to make porridge. I was inspired by a Filipino dessert I had recently, I don’t remember the name. It is made with cornstarch, coconut milk and served cold. I used this desert as my inspiration.
If you know how to make porridge then this will be easy. Just substitute coconut milk for water. It makes for a rich and luxurious consistency.
Ingredients
- 1 cup coconut milk
- 1/4 cup maize meal
- 1/4 tsp salt
- 3 teaspoon sweetened condensed milk optional
Instructions

Heat the cocnut milk in a saucepan. on medium heat

Blend the maize meal with a 1/4 cup of cold water.

Add the blended maize meal to the simmering milk and stir until it starts bubbling.

Reduce heat to low, cover the saucepan and let it bubble for 5 minutes

Add the salt and condensed milk and stir. Reduce heat and let it bubble for five more minutes.

Serve hot and top with roasted coconut flakes if desired.
The best part of the porridge is the crust in the pot.
