I had the curried barley, pine nuts and raisin salad a few weeks ago and I liked it enough to want to recreate it. The only thing I changed is the sweetness level, I think the one I had some added sweetness perhaps it was honey.
Ingredients
1 cup barley or brown rice
1 tbsp olive oil
1 onion
1 bell pepper or a quarter of each bell pepper in different colours
2 garlic cloves
1/4 cup pine nuts
1/2 cup raisins
1/2 tsp tumeric
1/4 tsp cumin
1/4 tsp curry powder
1/4 tsp crushed ginger
1/4 tsp cinammon
1/4 tsp black pepper
Instructions
Cook barley like you would rice with a 1:2 ratio with water.
Chop all the vegetables.
Saute all the vegetables and spices in pan.
Add the cooked barley and mix thoroughly.
Serve warm as a side dish or with some leafy greens.
