Leo is so far an easy child when it comes to food. He is not picky or maybe I just know what he likes. I know as he grows older it may change. The real issue for me is time, I usually have so much I need to do that I need recipes that are easy and or fast at the same time being healthy and affordable. I would say 95% of the time I prepare food from scratch but this is one occasion I chose not to do so.
Before I left for Zimbabwe, I tried making puff pastry and I failed miserably. I do not know what went wrong because I make pastry all the time and it looked quite simple. I will have to try it again but for today’s recipe I will use store-bought puff pastry. The main reason why I will try it again is that store-bought pastry is twice what I would pay for ingredients alone. The upside is that the store-bought pastry makes this a three ingredient recipe with minimal clean up that takes less than twenty minutes .
To make the sausage rolls, you need to thaw you pastry sheet(s). I used one pastry sheet for 4 sausages, if you need to make more than adjust the number of sheets. After thawing your pastry sheets, cut the pastry into 1cm strips. I cut my sausages in two to make the rolls bite size. Roll the pastry around the sausage.
Place the prepared sausage rolls on a lightly greased baking sheet and brush with egg wash. Bake in a preheated 400F oven for 15 minutes or until golden.
