Last week I had a hankering for salted dried fish. Like we have in Zimbabwe. I decided to make my own but now I have not decided what I want to do with it.
It is not like I can not find dried fish locally. Dried codfish is in plenty supply. A favourite breakfast on the island is codfish and potatoes. I do not like codfish. I have not quite acquired the taste for it.
I used tilapi fish fillets. I marinated them in brine made of 1 cup salt and 8 cups water for 30 minutes.
I then put them on a tray and put my oven at the lowest temperature possible, for me 175F. Took several hours for the fish to actually dry. To be honest if you can buy the fish already dried do that because it will save you time and possibly money.
As it is the fish just tastes like salt so I am going to have to cook it. I will post the recipe as soon as I decide how I want to cook the fish.
