Each time I find a recipe that needs onion powder I just make the recipe without it because it so expensive here. Onion powder is at least $7 and I can never justify the purchase for something I may not use more once before the best-by date. A couple of weeks ago I dried my herbs in the oven because I did not want to throw them out or let them dry in the pots. That is when it dawned on me that I could make my own onion powder.
I felt really silly that I had not thought of doing this before. A couple of years ago my father went to Liberia as a UN peace-keeper. My mother packed for him a lot of dried vegetables including dried onions. Onion powder is ground dried onions. This was really a duh moment for me.
To make onion powder, you cut the onions into rings of equal sizes. You can cut as many onions as you wish. To get about 3 tablespoons I cut two onions and it was what I really needed for the moment.
If you have a dehydrator then you can use that, I used my oven at the lowest temperature. You could also just dry them outside like you would mufushwa.
After the onions are dry then you need to grind them, you can use a food processor or duri.
Some recipes require onion powder as is but you can use it in a spice mix. You can try Paula Deen’s house seasoning that you can use in your everyday cooking.
House Seasoning
Ingredients
- 1 cup of kosher salt
- ¼ cup garlic powder
- ¼ cup black pepper
- ¼ cup onion powder
Instructions

Mix ingredients together and store in an airtight container for up to 6 months.
