I can drive in downtown Harare! That for me was an accomplishment. Depending on when you were last in Harare, there are a whole lot more pedestrians, cars and vendors in downtown Harare. The pedestrians and vendors did not bother me so much as combi and mushikashika drivers, they really don’t care for any rules of the road.
The vendors sell all kinds of things and cheaper than the store if you have cash. You can buy your groceries and clothes from these vendors. I did notice that there were a lot more vendors selling madhumbe and magogoya compared to when I was younger.
To keep her blood sugar low my mother does not eat potatoes anymore, she eats madhumbe or cassava. She peels the roots, boils and freezes them and eats them when she likes. She always has a stash. When I was home I would raid her stash and use them. I made a quick bread.
I love making quick breads because they are well quick. I added some carrots and you can see some purple from madhumbe.
Madhumbe Quick Bread
Ingredients
- 1/4 cup milk
- 1/4 cup canola oil
- 2 eggs, room temperature
- 1/2 cup honey
- 1 cup mashed madhumbe
- 1/2 cup brown sugar
- 1/4 teaspoon ground ginger
- 1 teaspoon cinnamon
- 2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoon baking powder
- 2 cups all purpose flour
- 1/2 cup grated carrots
Method
- Preheat the oven to 350 degrees F. Butter & lightly flour a 9×5 loaf pan.
- In your mixer, mix the butter, brown sugar, madhumbe, honey, eggs, milk and vanilla until well blended.
- Stir in the flour, baking soda, baking powder, carrots and spices. Mix just until combined.
- Scrape the batter into the prepared loaf pan – shake to distribute evenly.
- Bake for 50-60 minutes – until a toothpick or knife inserted in the center comes out clean.
- Remove from the oven and let cool 10-20 minutes.. then remove from the loaf pan and continue to cool.
- Store in an airtight container.
