We have been back in Bermuda a week now and battling allergies. Unlike Zimbabwe, Bermuda is damp and humid and whenever I return I start sneezing and feel sick. I really did not want to do anything until now.
We had a great Christmas with friends and are looking forward to the New Year. Today I am sharing with you this wings recipe that would work pretty well for your new year’s party.
This wings are glazed with a hot sauce made with mazhanje jam that is sweet and spicy. I made them when I was in Zimbabwe and my father who normally would not try anything sweet and spicy, indulged me and he loved them.You can totally change the level of spiciness by adjusting the hot spice you use. Here is the full recipe:
Mazhanje Glazed Wings
Ingredients
Wings
- 2 tablespoons chilli sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 lb chicken wings
- 1/2 cup all purpose flour
Glaze
- 1/4 cup honey
- 2 tablespoons mazhanje jam
- 2 tablespoons chilli sauce
- 1 tablespoon soy sauce
- 2 teaspoons fresh lime juice
- 3 cloves garlic finely chopped

Heat oven to 425°F. Line 2 cookie sheets with foil; spray with cooking spray.

In 1-gallon resealable food-storage plastic bag, mix chilli sauce, oil, salt, pepper and wings. Seal bag; shake to coat. Add flour; seal bag, and shake until wings are coated with flour. Place wings on cookie sheets.

Bake uncovered 30 minutes; turn wings over, and rotate cookie sheets. Bake 20 to 30 minutes longer or until golden brown and juice of wings is clear when thickest part is cut to bone (at least 165°F).

Meanwhile, in a saucepan, mix Glaze ingredients; heat to simmering over medium heat, stirring frequently, until slightly thickened, about 5 minutes. Remove from heat; set aside.

In large bowl, toss wings with sauce. Serve warm.
