I love smoothies but I do not like making them. I do not know why because its the easiest thing to do. You just put your ingredients in the blender, blend them and your drink is ready. I don’t know, perhaps I think about it too much that I end up not doing it.
I have thought about using muboora in a smoothie for more than half a year now. I just was not sure if it would work. Pumpkin leaves are not the easiest vegetable to deal with. I knew I had to remove the bark. What I was not sure of is whether I would need to cook the leaves first like I do in all the other recipes. Or what they would taste like raw. Most vegetables used for green smoothies are eaten raw in salads so it is kind of a nobrainer. I have not tried a pumpkin leaf salad, I do not think it would work or like it.
This morning I decided to give it a go. I decided to use raw pumpkin leaves and it worked. Of course it worked, the blender pulverized the leaves!
I used pumpkin leaves, raspberries, peanut butter, banana and milk. I used peanut butter as my protein source because it tastes good with banana and pumpkin leaves separately and now together.I had someone tell me that pumpkin leaves have no nutritional value, at the time I did not bother to check if what I was being told was factual. I think they just don’t like pumpkin leaves and use that as an excuse. This time I did some research. Pumpkin leaves are high in Vitamin A, K, Iron and Calcium. Before adding anything else to them they have no fat, cholesterol and high in dietary fiber. This information makes me feel good about my smoothie, plus it is delicious.

Muboora(Pumpkin Leaves) Raspberry smoothie
Ingredients
- 1 cup pumpkin leaves with the bark removed
- 1 1/2 cups raspberries
- 1 cup milk
- 1/2 banana
- 1 tablespoon peanut butter
Instructions

Blend everything together and serve cold.
