Plain rice is so boring. We have rice at least once a week largely because it is a safe option in our home, its one of those things that I know everyone will eat. I try different things with rice all the time. A few weeks ago I saw The Pioneer Woman make mushroom rice pilaf, it looked so easy so I decided to try it. The Pioneer Woman is like my friend in my head, love everything about her show.
Mushroom Rice Pilaf
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 4
Ingredients
- 2 tablespoons butter
- 1 chopped onion
- 2 cloves crushed garlic
- 8 oz chopped mushroom
- salt and pepper to taste
- 1 teaspoon thyme
- 1 cup rice
- 2 cups chicken stock
Instructions

Melt butter in saucepan on medium high heat. Add the garlic and onion and sauté until well softened.

Add the mushrooms, and cook for about five minutes or until the mushrooms are cooked.

Add the rice and stir until the rice is lightly toasted. Add the stock, thyme and salt and pepper and reduce the heat to low. Simmer for about 25 minutes or until rice is cooked.

Serve warm
