Can you believe it, we are already in April? Didn’t we just say happy new year? Soup season is almost over. Some days are hot already, aargh!
I am not going to the beach until May 24! May 24 is Bermuda day and that is the day most Bermudians start going to the beach until Labour day in September. Leo does not remember going to the beach so will not ask to go, so I will stretch that until May.
About the soup. It is a five ingredient dish and if you love brothy soups this is heaven.
You only need oxtail, onion, mustard greens, beef broth, thyme and salt. You can even skip the thyme. All you need to do is brown the oxtail and then add the chopped onions. Add the broth and simmer away for at least two hours. Then you add the mustard greens and cook for a further 15 minutes and your soup is ready.
I serve this as a soup as well with sadza. In which case I do not use as much broth.

Oxtail and Mustard Greens Soup
Ingredients
- 1 tablespoon olive oil
- 2 lbs oxtail
- salt and pepper to taste
- 1 chopped onion
- 2 teaspoon chopped thyme
- 3 cups beef broth
- 2 cup chopped mustard greens
Instructions

In a large soup pot, add the olive oil on medium heat. Add the oxtail and brown on all sides.

Season with salt and pepper. Add the onion and thyme and soften for a minute. Pour the beef broth and simmer on medium low for 2 hours or until the oxtail is tender. You may need to add more beef broth.

Add the mustard greens and cook for another 15 minutes.
