If you know anything about Zimbabwean food, then you know we put peanut butter in everything. Meat, rice, vegetables, porridge and as a snack.
I like quinoa, it is a great alternative to rice and cooked in the same way. This is how I came up with this recipe. We make peanut butter rice often, so I decided to do the same with quinoa.
Just like rice, you can eat peanut butter quinoa as is.
The rest of the meal I just made cooked it without a recipe. I cooked chimukuyu, much in the same way as in when I made it with peanut butter before but without the peanut butter. The spinach was simply sauteed in some oil and it was some of the best lunch I have ever made for myself.
My guess is that this would pretty much work with most grains. I am going to be trying this with some unmilled millet and sorghum.
