Leo loves potato wedges, I do not. Whenever he decides to cook(which is once in a long while), he usually makes potato wedges in the oven. I think he makes them because he can stick them in the oven and not think about it until they are done.
I prefer potato wedges on the stove top, pan fried. Its less healthy but I like them this way. I figure since I eat potato wedges once in a while its fine.
I pan fried the peeled wedges. I do not like the taste of potato skin so I always peel them. After draining them I tossed them in the spicy paprika. It is important to add the seasoning to the potatoes while they are still hot to allow the seasonings to stick to the potatoes. I think this has to be my favourite seasoning as of today until or at least until I stumble upon another great seasoning. It is made of paprika, cumin, cayenne pepper and salt. It is not fiery hot spicy but it is so good. As I write this, I am thinking it will be a good idea to use this seasoning on my steak bites.
Potato Wedges with Spicy Paprika
Ingredients
- 1 lb potatoes peeled and cut into wedges

Oil for frying
Spicy Paprika - 3 teaspoons paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1/2 teaspoon salt
Instructions

Mix all the ingredients for spicy paprika in a bowl and set aside.

Pour oil in a heavy bottomm skillet anbout 1 inch. Heat oil to about 350F and add the potato wedges in a single layer and cook until golden brown about 10 minutes. Remove from the skillet with a slotted spoon and drain on absorbent paper.

Quickly transfer the potatoes to a bowl while still hot and sprinkle spicy paprika and toss until well coated.

Serve in a warm serving dish.
