My mom grows a lot of small seed grains like sorghum, millet and rapoko. They are the easiest grains to grow since they do not need a lot of water and or fertiliser. Harvesting by hand is cumbersome work but doable.
My mom like a lot of people, grind or mill the grains to make a flour to make sadza with. I have made bread before with sorghum as well as muffins but never before as just the grains. Technically the grains cook like rice. Actually sorghum tastes like brown rice.
Sorghum has a bite to it that makes it perfect in a salad.
Sorghum Salad
Ingredients
- 1 cup sorghum
- 1 cucumber diced
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 red onion diced
- 1 avocado diced
- ½ cup feta cheese crumbled
- Cilantro
Dressing:
- 2 tablespoons lemon juice
- 1/4 cup Olive Oil
- 2 crushed garlic cloves
- Salt and Pepper for taste
Instructions

Make the sorghum by boiling it in 2 cups of water. Like you would do with rice. Remove from heat and allow to cool completely.

Mix all the dressing ingredients.

Dice all the vegetables and toss the avocado with some lemon juice. Place the sorghum in a bowl and toss in all the vegetables and cheese. Add the dressing, toss everything together. Sprinkle some cilantro and serve cold.
