I have hated beans in their many forms after eating badly cooked beans high school for four years on an almost daily basis. Sometimes they would be under cooked or you could find stones in them. To be fair the cooks were doing the best they could catering to hundreds of students at a limited budget. The mission boarding boarding schools in Zimbabwe are designed to give you the best education, you do not send your child for the food or the rooms! Recently i have found myself craving beans and decided to make some.
This recipe is simple and saves you on cooking time and your energy bill.
Ingredients
2 cups beans
1 onion
1 bell pepper
1 scotch bonnet pepper
Salt
Pepper
Curry powder
Method
Soak beans for 4-6 hours.
Throw away water and refill with fresh water.
Bring to boil. Turn off stove, cover and let sit for an hour or two.
Pour off the water and refill with fresh water
Bring back to boil
Add chopped onion, bell pepper, scotch bonnet and stir in. If you can find colored peppers that will be better for colour. Also if you do not want the beans to be so spicy you can remove the seeds from the scotch bonnet peppers.
Add salt, pepper and curry powder.
Cook until the beans are soft for about thirty minutes on low heat. Make sure the liquid does not dry up since you want your beans to be syrupy.
