I recently read an article detailing the different harmful things found in most ready to eat foo like cereal and ice cream. It was not new information for me but it got me thinking of why people buy those things supposing that they know its not good for them.
Most store bought food is convenient. Sure the crackers you like have several chemicals but making them from scratch takes so time and skill that you might not have. Also organic whole food costs a lot more money especially in a country like Bermuda where almost all the food is imported. I really thought about this because I like making ice cream and it is not the most affordable option. It is cheaper to make my own ice cream compared with high end of the ice cream, so I just tell myself I am making the best ice cream.
This week, we(me and Leo) made some strawberry ice cream. He likes helping with cooking which is more work when I am cleaning up. His favourite is ice cream but he asked to make strawberry. He doesn’t like that there are bit of strawberry but he ate it.
Strawberry Ice Cream
Ingredients
- 2 cups strawberries washed and hulled
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 1 cup milk
Instructions

Mash or puree strawberries with a food processor to desired consistency. Pour into a large bowl and add sugar. Stir to combine and let stand for about 5 minutes or until the sugar is dissolved.

Stir in the rest of the ingredients and stir until well combined

Pour into prepped ice cream maker and churn for 10 minutes or until ice cream is thick.

Serve right away for soft ice cream or put the ice cream in a air tight ice cream container and freeze for later.
