I also love making flavoured fatcooks, I have done pumpkin and chocolate chip fatcooks before. Tsubvu fatcooks were an almost no-brainer.

I really should not admit to how many I actually ate. Everyone was skeptical but I had to taste what I made and THEY. ARE. SO. GOOD!

Ingredients
- 1 cup tsubvu puree
- 1 cup all-purpose flour
- 1 egg, beaten
- 2 teaspoons baking powder
- 2 tablespoons sugar
- ¼ teaspoon salt
- 1 teaspoon pumpkin spice
- cooking oil for frying
Instructions
- Mix all the dry ingredients in a bowl. Mix the tsubvu puree and egg, add to the dry ingredients until combined. Do not over mix.
- Heat oil in a saucepan to 350F.
- Spoon the tsubvu mixture into oil about 2 minutes on each side. Drain on a paper towel.
- Serve warm with tea.
