I am an adventist and in my country that would mean you eat soya mince or chunks. Not me! Most times I would rather eat plain rice or sadza than eat soya mince. I do not like the texture and they can be bland. My husband has however been talking about them non stop since a friend brought them for us from home. To stop him from asking for them, I made them and I must say I was surprised I actually liked them. I am sharing this recipe hoping to convert someone else as well.
Ingredients
- 1 cup soya mince
- 1 onion, diced
- 2 cloves crushed garlic
- 2 stalks celery diced
- 2 carrots diced
- 2 bell peppers diced(different colours)
- 1 tbsp olive oil
- 1 cup cooked kidney beans
- 1 cup crushed tomatoes
- 1 tsp cumin
- 1 tsp red pepper flakes
- 2 tsp chilli
- 1 tsp thyme
- 1 tsp tumeric
- salt and pepper
Method
Soak the soya mince in two cups of boiling water for ten minutes.
Saute the onion, peppers, garlic, celery, and carrots in olive oil until the onion are soft.
Serve on its own or with rice, sadza or chips.
