Last week I decided to make some zucchini fritters for Leo. I found a recipe on Pinterest that looked good and healthy. After making them they were inedible, I am not sure whether I did something wrong or it is how they are supposed to be. Not to be outdone I tried them again in a different way all together and this time around they were good.
The first recipe I found used mashed potatoes and flour to bind the grated zucchini together, for these ones I used eggs and breadcrumbs. I also fried them in some oil which is not a healthy option but I wanted them to be well cooked. I suppose I could have baked the fritters but frying was faster.
This is an easy recipe. The fritters can be eaten as an appetizer or snack and I suppose it will come in in handy with toddlers too.
Zucchini Fritters
Ingredients
- 2 medium zucchini grated
- 1 cup breadcrumbs
- 1/4 cup parmesan cheese grated,
- 1 teaspoon thyme
- 1 teaspoon basil
- 1 egg
- salt and pepper to taste
- 1/4 cup oil
Instructions

Mix all the ingredients together except for the oil. Form into small patties.

Heat oil on medium high heat in large skillet. Cook the patties about 5 minutes on each side or until browned.

Serve warm.
