Zviyo waffles

I am feeling homesick, a little more than usual. Perhaps because last year this time I was in Zimbabwe and enjoying myself. No matter how bad things are in Zimbabwe, I always enjoy myself. When I am there I am just happy to be breathing Zimbabwe air and eating Zimbabwe grown food.

Thankfully I still have some food I brought back last year. I use my dry goods sparingly and to keep them for a long period I keep them in the fridge so I don’t get weevils or mold. Today we made some waffles using hupfu hwezviyo(finger millet) for breakfast I have tried tricking Leo into eating sadza rezviyo by calling it chocolate sadza and it didn’t work. He would rather starve. He did however like these, got a big thumbs up!

Zviyo Waffles

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
  • 1/2 cup ground zviyo (finger millet flour)

Instructions

  1. Preheat waffle iron according to your manual.

  2. Sieve all dry ingredients in a bowl and set aside. Beat eggs in a large bowl until light and fluffy. Add in milk, vegetable oil and vanilla extract and mix. Add in the dry ingredients and mix gently.

  3. Grease the waffle iron. Pour zviyo mix onto waffle iron and cook until golden brown.

  4. Serve warm with fruit and syrup or with chicken and coleslaw salad.
